as a child i ate a good bit of campbell's soup. i loved the homemade chicken noodle the best. at some point, i remember the recipe changing and i wasn't satisfied. of course, i couldn't eat it today and taste the original flavors i remember so well from their cans. for many reasons, i don't purchase these handy cans. one of those reasons: i love to cook. i love to cook from fresh ingredients, using my hands to make the noodles, to create the broth which aims to honor every part of the animal or vegetable. i love making food from as few, well thought out (and often improvised) ingredients. thus, moving through the day with a plan and creating a simple meal. the soup tasted so much better than i could have imagined. the tastes from the earliest memories of campbell's soup were met, with a soup that gives those cans a run for their money (and sodium). i was tickled, yes tickled that the meal turned out so well. it's amazing what one can do with just a little creativity and confidence.
